One of the goals I set for myself this month was to create (find) 10 healthy lunches that we could take for lunch. The typical stable for my husband is Chipotle's burrito bowl with no rice and I take leftovers from dinner the night before. We have been struggling to find something new. Last month, my husband attempted to switch to tune and sauerkraut; however, we now just have a lot of uneaten cans of tuna in the pantry. For me, I was going to "make" better options just appear in the mornings. I spent a lot of money in our office restaurant in the month of December instead. I knew part of "investing" in our health and pocket books had to involved our lunches somehow.
I have figured out just like any meal, lunches begin with a weekly meal prep. Buying food that is easy to grab in the morning or taking some time on Sunday (and maybe midweek sometime) to make everything easy to grab-and-go. Here is what I came up with to try this month, and so far, so good!
